It's a sample of 55 people, 12 of whom dropped out.
86% of them have tertiary education; 44% are nurses.
The authors stratify on multiple dimensions but don't control for them.
The only difference is in water mass, which is not in the balance table

Nurses are notorious for eating like crap, long hours without proper lunch or bathroom breaks, insane amount of mental and physical stress (been there, done that)... We literally have a study on nurses' health span over 20 years 🤦♀️ pubmed.ncbi.nlm.nih.gov/9065374/
